Loaded Potato-Parmesan Waffles with Eggs

A yummy, savory breakfast that hits all of the right notes–crunchy, salty, gooey and just plain yummy!  Do you want to impress your Thanksgiving house guests or a special someone on New Year’s morning or Valentine’s Day with a new dish?  What about on Easter morning when you have neighbors and friends over for brunch?  Try our loaded potato-Parmesan Waffles with Eggs and you will be the star of the gathering.

Ingredients:

  • 1 1/2 lbs. russet potatoes
  • 1/3 cup shredded Parmesan cheese
  • 5 tablespoons butter, melted
  • 1 large shallot, grated
  • 4 fried eggs
  • 4 slices bacon, cut into 1/2-inch strips and cooked
  • chopped parsley

Directions:

  1. Peel and grate potatoes; squeeze dry in a clean dish towel.
  2. In a bowl, mix potatoes with cheese, butter and shallot; season with salt and pepper.
  3. Coat waffle iron with non-stick cooking spray.
  4. Using a quarter of the potato mixture for each waffle, cook over high until golden and crispy, about 6-8 minutes.
  5. Top with an egg, bacon and parsley.  Season to taste.

Makes 4

Helpful hints:

  • I used a large box grater for grating the potatoes, but you could use frozen hash brown potatoes.
  • The shallot was grated using a fine microplane.
  • We always cook our bacon in the oven using a wire rack placed over a cookie sheet.  This allows it to cook through, stay flat and the fat drips onto the pan. Spray the wire rack with Pam or a similar product.  We put a paper towel in the bottom of the cookie sheet to absorb most of the bacon fat.
  • We placed the egg into a cookie cutter to make a fried egg shaped like a star for a fun presentation.

Daughters and Sons Pizza

Daughters and Sons Pizza

Daughters and Sons Pizza, where it’s okay to be square.

Lynchburg, Virginia’s newest pizza joint has opened in the arts and cultural district at 522 5th Street.  Taking advantage of the revitalization and renewed interest in this part of downtown the Abrusto Food Group is helping 5th Street become vibrant and the newest place to be.  Located at 522 5th Street Daughters and Sons Pizza is open for lunch and dinner.  Monday through Sunday they are open 11 am until 9:30 pm.  There is plenty of parking just outside the door.

Enter the restaurant and find a table, take a seat for a dine-in experience.  While you wait for your order you will be served popcorn with olive oil and sea salt.  Top it with freshly grated cheese.  What a nice way to be welcomed and to wait.

Pizza is their main focus.  It’s Sicilian-style and square!  The crust is made from their focaccia bread dough–which is proofed for 4 days–so it has a unique flavor and mouth feel.  The added cornmeal to the outside of the crust is yummy.  The pizza is old by the square or by the pie.  Choose from pepperoni, house-made sausage, 3-cheese, vegetarian or the combo–house-made spicy sausage, charred pepperoni, and assortment of pizza veggies, buffalo mozzarella and marinara sauce.

In addition to the pizza they serve sandwiches made on focaccia bread and a few salads.  They are best known for their Muffaletta “New Orleans Style.”  The great tasting bread is topped with Italian sliced meats, melted mozzarella, mild provolone and the necessary Creole olive salad.  Fresh made salads are served with house-made dressings, plus there is a cheeseboard offering.  Don’t forget dessert!  Ice cream sandwiches top off your meal.  Either their “Classic,” a chocolate brownie cookie with vanilla ice cream of their flavor of the week.

A rotating variety of beers by draft, cans or bottles, including a selection of craft beers and a weekly “2 dollar a can” special.  A rotating selection of wine is available by the bottle or the glass.

The chef and owner of Daughters and Sons Pizza is a VES graduate.  Jason attended the Culinary Institute of America in New York and apprenticed and worked in kitchens in Europe for 8 years.  He decided it was time to return to Lynchburg to raise his family.
